HABANERO CHOCOLATE: BLACK CONGO

published on 20/07/2024 Technical Characteristics of the Habanero Chocolate
The Habanero Chocolate chili, also known as Black Congo, is a particular cultivar of the Capsicum Chinense species originating from Jamaica. This chili pepper is distinguished by its medium-high spiciness, with values on the Scoville scale ranging between 200,000 and 425,000 units. The name "Habanero Chocolate" derives from the characteristic color of the fruit, which has brownish-black hues, and a barely perceptible aromatic note of tropical fruits and dark chocolate.

Characteristics of the Habanero Chocolate Chili Plant
The Habanero Chocolate is a medium-sized plant, reaching a height between 60 and 90 cm. The stem branches out at the top, forming a dense bush with an intense green color. Each internode produces small flowers with six cream-white petals and a greenish hue at the center.
This variety of chili is quite easy to cultivate and offers abundant productivity, with the possibility of obtaining up to 50-60 fruits or more per plant. Flowering occurs between May and July, and it takes about 90 days to complete the cycle until the fruit matures. In regions with a mild climate, it is possible to perform a staggered harvest until mid-December, depending on the arrival of the cold.

The Habanero Chocolate Fruit
The Habanero Chocolate fruit is pendulous and reaches full maturity in late season, between August and September, after about 120 days. When fully grown, the fruit measures 4-6 cm in length and 2.5-5 cm in width. During maturation, the fruit's color transitions from light green to dark red-brown.
In addition to its distinctive color, the Habanero Chocolate is characterized by intense aromas and flavors. It has aromatic notes of dark chocolate and tropical fruits, along with a herbaceous flavor with hints of toasted bread, briny, olive paste, and sweet undertones of mahogany wood. Despite its moderate spiciness compared to other Habaneros, with about 350,000 units on the Scoville scale, the Habanero Chocolate has the extraordinary ability to enhance the flavors of the dishes it is paired with.

Pairings and Uses in Cooking
The Habanero Chocolate pairs perfectly with many recipes, including tomato and seafood soups, vegetable flan, ribollita (a typical Tuscan dish with beans and kale), carbonara, Chianina beef stew, pan-fried pigeon, and mixed grills. Considering its name, it naturally pairs well with chocolate: a Sacher torte with Habanero Chocolate becomes an unforgettable culinary experience!
