SCOTCH BONNET

The scent of Scotch Bonnet is decidedly fruity, reminiscent of yellow apple, cherries, and the green notes of tomatoes. It is particularly suitable for flavoring dishes of the "Mediterranean tradition," such as the classic eggplant parmigiana, vegetable quiches, and vegetable-filled ravioli. It also works great in dishes with red meat and fish soups. It is enticing when paired with dishes featuring white truffles and medium-aged cheeses. Appropriately dosed, it is delightful with chocolate pralines and other cocoa-based sweets. For chili lovers, Peperita wanted to dedicate a dish to their region: the Bibbonata, closely tying Scotch Bonnet to the scents of the Mediterranean Sea such as garlic, oil, chili, and bottarga.

DESCRIPTION
The Scotch Bonnet chili pepper is generally red and yellow when fully ripe. It is also known as Boabs Bonnet, Scotty Bons, Bonney Pepper, or Caribbean chili pepper. It is mainly found in the Caribbean islands, Guyana, the Maldives, and West Africa. It is also renowned for its resemblance to a Scottish tam o'shanter hat, similar to a beret.

Its spiciness level is not as high as super-hot peppers, but still considerable as it can reach 350,000 SHU.
