SAVORY PANETTONE WITH CHILI AND CHEESE

Ingredients (for a 1 kg savory panettone):
500 g all-purpose flour
7 g dry yeast
150 ml lukewarm milk
80 ml extra virgin olive oil
2 eggs
150 g grated cheese (Parmesan or Pecorino)
100 g diced cooked ham
1 teaspoon Peperita Jalapeño chili powder
1 teaspoon fresh rosemary, chopped
Salt and pepper to taste
1 teaspoon sugar
1 tablespoon milk for brushing
Preparation:
In a large bowl, mix the flour, yeast, and sugar. Add the lukewarm milk and mix until you get a soft dough.
Add the oil, eggs, and start working the dough by hand or with a stand mixer. Add salt and continue to knead until smooth and homogeneous.
Cover the dough with a cloth and let it rise in a warm place for about 2 hours, or until it doubles in size.
Once the dough has risen, add the grated cheese, diced ham, Peperita Jalapeño chili powder, and rosemary. Gently knead to evenly distribute the ingredients.
Transfer the dough to a panettone mold (or a tall cake pan) and let it rise for another hour.
Preheat the oven to 180°C. Before baking, brush the surface of the panettone with the tablespoon of milk.
Bake for about 40-45 minutes, or until golden brown on the surface and cooked inside (check with a toothpick).
Let it cool before serving, cutting it into slices.
