400 g Herbs
100 g Pecorino sardo cheese
1 clove of Garlic
1 teaspoon Peperita Cayenne Pepper powder
1 package Fresh puff pastry
1 Egg
Extra virgin olive oil
Salt
Instructions
Preparing the Herbs:
Wash and thoroughly squeeze the herbs, then chop them finely.
Peel the garlic clove, crush it, and sauté it in a non-stick pan with three tablespoons of extra virgin olive oil until golden brown.
Once the garlic is golden, remove it from the pan and add the herbs.
Cook the herbs, stirring frequently for about 10 minutes, until they are well dried and crispy. Add the cayenne pepper powder.
Let the herbs cool slightly and transfer them to a colander to remove excess oil. Then place them in a bowl and mix with the grated Pecorino cheese.
Preparing the Rolls:
Roll out the puff pastry on a lightly floured surface.
Cut the pastry into squares of about 8 cm on each side.
Prick each square with a fork and distribute the herb mixture in the center, leaving the edges free.
Roll the puff pastry around the filling to form rolls, sealing the edges well.
Baking:
Brush the top of each roll with the beaten egg.
Bake at 180 °C (356 °F) for about 30 minutes, until the rolls are golden and crispy.
Remove from the oven and serve hot.
