SPICY HERB PUFF PASTRY ROLLS

Ingredients
  • 400 g Herbs
  • 100 g Pecorino sardo cheese
  • 1 clove of Garlic
  • 1 teaspoon Peperita Cayenne Pepper powder
  • 1 package Fresh puff pastry
  • 1 Egg
  • Extra virgin olive oil
  • Salt
Instructions
  1. Preparing the Herbs:
    • Wash and thoroughly squeeze the herbs, then chop them finely.
    • Peel the garlic clove, crush it, and sauté it in a non-stick pan with three tablespoons of extra virgin olive oil until golden brown.
    • Once the garlic is golden, remove it from the pan and add the herbs.
    • Cook the herbs, stirring frequently for about 10 minutes, until they are well dried and crispy. Add the cayenne pepper powder.
    • Let the herbs cool slightly and transfer them to a colander to remove excess oil. Then place them in a bowl and mix with the grated Pecorino cheese.
  2. Preparing the Rolls:
    • Roll out the puff pastry on a lightly floured surface.
    • Cut the pastry into squares of about 8 cm on each side.
    • Prick each square with a fork and distribute the herb mixture in the center, leaving the edges free.
    • Roll the puff pastry around the filling to form rolls, sealing the edges well.
  3. Baking:
    • Brush the top of each roll with the beaten egg.
    • Bake at 180 °C (356 °F) for about 30 minutes, until the rolls are golden and crispy.
    • Remove from the oven and serve hot.
