  • 350 g fresh and flash-frozen tuna
  • Dressing: extra virgin olive oil with orange, lemon, and Peperita chili
  • Salt to taste
  • Chives
  • Pepper to taste
Preparation:
  1. Place the tuna in the freezer for a few minutes until it firms up slightly; this will make it easier to cut. Then, dice the tuna into very small cubes to achieve a uniform texture.
  2. In a bowl, combine the tuna cubes with the extra virgin olive oil dressing flavored with orange, lemon, and Peperita chili. Add salt, a grind of white pepper, and chopped chives. Gently mix to blend the flavors without mashing the tuna.
  3. Use a ring mold to plate the tartare into individual servings. For an extra touch, you can create a base with a cold omelette or place the tartare on a bed of lettuce and orange salad.
