SCRAMBLED EGGS WITH SPINACH

Eggs are an excellent source of protein and healthy fats, while spinach adds valuable vitamins and minerals.
Ingredients:
2 eggs
50g of fresh spinach (washed and chopped)
1 tablespoon of milk
Salt and pepper to taste
1 tablespoon olive oil "Il Cavallino"
A dash of truffle oil and Peperoncino Peperita Tartuff
Instructions:
Prepare the ingredients: Wash the spinach well and finely chop it. Beat the eggs in a bowl and add the milk, salt, and pepper. Mix everything well until you get a homogeneous mixture.
Cooking the spinach: In a non-stick skillet, heat the olive oil over medium heat. Add the chopped spinach and cook for about 2-3 minutes, stirring occasionally, until wilted.
Adding the eggs: Lower the heat slightly and pour the beaten egg mixture over the spinach in the skillet. Let it cook for a moment without stirring until the edges begin to set slightly.
Gently stir: With the help of a spatula, gently stir the eggs, being careful to scrape the bottom and edges of the skillet. Continue to stir until the eggs are cooked but still soft and creamy.
Serving: Once the eggs are cooked to your liking, turn off the heat and transfer the scrambled eggs with spinach to a serving dish. Drizzle with a dash of white truffle oil "Tartuff" and serve hot.
