Ingredients:
  • 250 g of carrots (to be peeled)
  • 200 g of sugar
  • 70 g of almond flour
  • 180 g of all-purpose flour
  • 50 g of potato starch
  • 1 whole egg
  • 1 egg yolk
  • 130 ml of vegetable oil
  • Zest of 1 orange
  • 1 vanilla bean
  • 8 g of baking powder
  • 2 teaspoons of "Erotico" chili pepper
Carrot cupcakes are simple and delicious, perfect for a light snack or healthy breakfast. The secret lies in the combination of the delicate flavor of carrots and the lively aroma of orange zest, which together create the perfect balance of sweetness and freshness.

To start, wash the carrots thoroughly, peel them, and finely chop them using a food processor until they have a nearly creamy consistency. In a large bowl, beat the whole egg and the yolk with the sugar until the mixture becomes pale and fluffy. At this point, gently fold in the chopped carrots.
In a separate bowl, sift together the all-purpose flour, almond flour, potato starch, and baking powder. Gradually add this mixture to the egg and carrot batter, stirring gently. To enhance the aroma, grate the zest of one orange and add the seeds from a vanilla bean. These ingredients will add an irresistible fragrance to the cupcakes.

Now, slowly pour the vegetable oil into the batter, mixing carefully to ensure everything is well combined and smooth.
Prepare 12 muffin molds by lining them with paper cups or greasing and flouring them lightly. Fill each mold about three-quarters full with the batter, leaving about a centimeter from the top to allow the cupcakes to rise during baking.

Bake the carrot cupcakes in a preheated oven at 180°C (350°F) for about 20-25 minutes. Check the baking by inserting a toothpick into the center of one cupcake: if it comes out clean, they are ready. Let the cupcakes cool before removing them from the molds.

Once ready, you can serve them with a light dusting of powdered sugar for an extra touch of sweetness. These carrot cupcakes are perfect for enjoying any time of the day, with their delicate flavor and softness that will charm both young and old!
