BEAN SALAD WITH APPLE AND AVOCADO

Ingredients:
250 g cooked cannellini beans
100 g cooked red beans
1 ripe avocado
1 organic red apple
Fresh parsley, to taste
4 tablespoons extra virgin olive oil
Salt and pepper, to taste
1 tablespoon Jalap-lemon seasoning
Optional: fresh oregano
Preparation:
Prepare the ingredients: Peel and cut the apple into wedges, then into small cubes. To prevent browning, immediately toss the apple pieces with a little lemon juice. Drain the cannellini and red beans, reserving a couple of tablespoons of their liquid. Cut the avocado in half, remove the pit, scoop out the flesh, and cut it into fairly large, even pieces.
Make the dressing: In a small bowl, combine the reserved bean liquid, extra virgin olive oil, lemon juice, Jalap-lemon seasoning, salt, and pepper. Use a fork to whisk the ingredients together until you create an emulsion.
Assemble the salad: Roughly chop the parsley with your hands. In a large bowl, mix the beans, apple cubes, avocado pieces, and parsley. Toss everything with the prepared dressing.
