CABBAGE AND SPICY MANDARIN ONION SALAD

Ingredients For 4 people: • 750g white cabbage • 60g smoked scamorza cheese • 2 onions • 2 teaspoons breadcrumbs • 1 hot chili pepper • 1 teaspoon mandarin zest • 1 teaspoon Peperita Herbs or Jalap-Lemon • Extra virgin olive oil • Salt Instructions
Finely slice the onions and put them in a thick-bottomed pan along with chopped chili pepper and one or two tablespoons of olive oil. Cover with a lid and sauté over low heat for 10 minutes.
Trim the cabbage and thinly slice it, then blanch it in a little water for 3-4 minutes. Drain it in a colander, pressing lightly to remove excess water. Add the cabbage to the onions, salt, and continue cooking for another 10 minutes, always with the pot covered.
Cut the smoked scamorza cheese into very thin slices. Mix the mandarin zest with breadcrumbs and add the Jalap-lemon powder.
Divide the vegetables into 4 portions. On a baking tray lined with parchment paper, form 4 small nests with the vegetables. Sprinkle with breadcrumbs and place the scamorza slices on top. Grill in the oven at 180°C for about 5 minutes.
