LAMB RACK WITH AROMATIC CRUST AND CHILI POMEGRANATE SAUCE

Ingredients for the Lamb Rack (4 servings):
  • 1 lamb rack (about 800g – 1 kg)
  • Salt and pepper to taste
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon of mustard
For the Aromatic Crust:
  • 100g breadcrumbs
  • 1 bunch of fresh parsley (about 20g)
  • 1 garlic clove
  • Zest of 1 untreated lemon
  • A pinch of chili powder (Scotch Bonnet or Habanero Fatali recommended)
  • 3 tablespoons of extra virgin olive oil
  • 1 teaspoon of 11 Peperita herbs
For the Chili Pomegranate Sauce:
  • 1 pomegranate (for about 150 ml of juice)
  • 1 teaspoon of honey
  • A pinch of chili powder
Start with the lamb rack. Clean it well, removing any excess fat, and rub it with a mix of salt, pepper, and a drizzle of extra virgin olive oil. Let it rest for a few minutes while you prepare the aromatic crust.

For the crust, mix breadcrumbs, chopped fresh parsley, crushed garlic, lemon zest, and a pinch of chili powder (for a stronger flavor, use Scotch Bonnet or Habanero Fatali). Add some olive oil to get a sandy and compact consistency.
Now, cook the lamb. Sear the rack in a hot pan with a little oil, browning it evenly on all sides. This will seal in the juices and keep the meat tender and flavorful.

Once seared, brush the lamb with a thin layer of mustard and cover it with the aromatic mix, pressing firmly to make sure the crust sticks. Place the rack on a baking sheet lined with parchment paper and roast in a preheated oven at 180°C for about 20-25 minutes, depending on the desired level of doneness.

While the lamb is in the oven, prepare the sauce. Juice the pomegranate and reduce the juice in a small saucepan over medium heat with a teaspoon of honey and a pinch of chili powder. The sauce should become slightly syrupy and velvety.

Once the lamb is cooked, let it rest for a few minutes before cutting it into portions. Serve it with the chili pomegranate sauce, accompanied by festive sides like roasted potatoes, seasonal vegetables, or a fresh salad.
