SPAGHETTI WITH ANCHOVIES, OLIVES, AND CHERRY TOMATOES

Ingredients for 4 people
  • 500 g of spaghetti
  • 400 g of cherry tomatoes
  • 30 g of anchovy fillets
  • 1 clove of garlic
  • Half a teaspoon of Scotch Bonnet chili powder
  • Black olives to taste
  • Fine salt to taste
  • Olive oil to taste
Instructions
  1. Wash the cherry tomatoes well and cut them into quarters.
  2. In a pan, pour some olive oil and add the garlic clove and anchovy fillets. Stir well until the anchovy fillets have "melted".
  3. Add the finely chopped chili powder and sauté for a few moments.
  4. Add the chopped cherry tomatoes and black olives. Cook over moderate heat for 10-25 minutes.
  5. Meanwhile, cook the spaghetti in plenty of salted water. When they are al dente, drain them directly into the pan with the sauce.
  6. Sauté the spaghetti over high heat for a few moments, mixing well.
