SPICY KALE AND WHOLE WHEAT PASTA

Ingredients (serves 4)
  • 320 g (11 oz) whole wheat pasta
  • 300 g (10.5 oz) kale
  • 2 garlic cloves
  • 4 tbsp extra virgin olive oil
  • 1 tsp Peperita chili powder (e.g., Jalapeño or Habanero Fatali, depending on spice tolerance)
  • Salt to taste
  • Grated pecorino cheese (optional)
 
Instructions
  1. Prepare the kale
    • Remove the tough central stems from the kale leaves and wash them thoroughly.
    • Blanch the kale in boiling salted water for about 5 minutes. Drain and rinse with cold water to preserve its bright color.
  2. Make the sauce
    • Heat the olive oil in a large skillet and add the whole or slightly crushed garlic cloves. Sauté over low heat until golden.
    • Add the kale, chopped into strips, and cook for 10 minutes. If needed, add a ladleful of pasta cooking water to keep it moist.
    • Sprinkle the chili powder over the kale and mix well to distribute evenly.
  3. Cook the pasta
    • Boil the pasta in salted water according to the package instructions.
    • Drain the pasta al dente and transfer it to the skillet with the kale.
  4. Combine and serve
    • Toss the pasta with the kale mixture for a couple of minutes to let the flavors meld.
    • Serve hot, topped with grated pecorino cheese if desired.
 
Tip
For a heartier version, add toasted pine nuts or browned sausage to the kale mixture.
