EXOTIC SAUCE WITH CAROLINA REAPER FOR BBQ

Ingredients:
  • 100 ml white vinegar
  • 1 fresh Carolina Reaper chili or 1 teaspoon of powder
  • 2 tablespoons yellow mustard
  • 1 ripe mango, peeled and diced
  • 1 medium onion, finely chopped
  • 1 papaya, peeled and diced
  • 1 teaspoon sea salt
  • 2 tablespoons brown sugar
  • 2 garlic cloves, finely chopped
  • 1/2 teaspoon black pepper
  • 1 teaspoon sweet paprika
  • 1 bay leaf
Instructions:
  1. Start by preparing the ingredients: finely chop the onion and garlic. Peel and dice the mango and papaya.
  2. In a saucepan, pour the white vinegar and bring it to a boil over medium heat. Add the chopped onion and garlic, cooking until they become soft and translucent.
  3. Add the Carolina Reaper chili (handle with care and, if possible, use gloves). Mix well.
  4. Add the diced mango and papaya, followed by the yellow mustard, sea salt, brown sugar, black pepper, paprika, and bay leaf. Stir everything carefully.
  5. Reduce the heat and let it simmer for about 20-30 minutes, stirring occasionally, until the fruit is completely softened and the ingredients have blended into a thick and aromatic sauce.
  6. Remove the bay leaf and blend the sauce with an immersion blender until smooth. If you prefer a more rustic sauce, you can leave some chunks of fruit intact.
  7. Taste and adjust the salt if necessary. If the sauce is too thick, you can add a bit of water or vinegar to reach the desired consistency.
  8. Let it cool completely before transferring it to a sterilized glass jar. Store it in the refrigerator and use it to accompany grilled meat, fish, or vegetables.
This exotic Carolina Reaper sauce is perfect for adding a touch of heat and tropical flavor to your BBQ. Be careful, though, because the Carolina Reaper does not forgive!
