400 g of cherry tomatoes
1 red bell pepper
A pinch of Habanero Chocolate chili powder (or any other chili)
1 teaspoon of tomato paste
1 spring onion
1 tablespoon of sugar
1 tablespoon of ground cumin
2 tablespoons of apple cider or rice vinegar
Salt to taste
Black pepper to taste
1 garlic clove
Extra virgin olive oil (EVO) as needed
1 teaspoon of cornstarch
Preparation
Finely chop the garlic and spring onion.
Wash and halve the cherry tomatoes.
Dice the red bell pepper.
In a large pan, heat some EVO oil over medium heat.
Add the garlic and spring onion and sauté until golden brown.
Add the cherry tomatoes, red bell pepper, and chili powder.
Mix well and add the tomato paste.
Cook everything for about 15 minutes, stirring occasionally.
Add the sugar, ground cumin, and apple cider or rice vinegar.
Mix well to combine all the ingredients.
Use an immersion blender to blend the sauce until smooth.
If the sauce is too thick, add some water to adjust the consistency.
Bring the sauce back to a boil.
Dissolve the teaspoon of cornstarch in a bit of water and add it to the sauce, stirring well to avoid lumps.
Continue cooking until the desired thickness is reached.
Pour the hot sauce into sterilized jars.
Seal the jars and let them rest for at least an hour before enjoying.
