Bring a touch of comfort food with this delicious cheese dip, perfect for accompanying crispy tortilla chips. Rich and creamy, this dip combines the intense flavor of cheddar or Emmentaler with a hint of smoked paprika and a spicy touch of habanero or jalap-lemon. Ideal for sharing with friends and family, it's an excellent choice for an informal appetizer or a night in front of the TV. Besides its irresistible taste, the cheese dip offers balanced nutritional value, making it a treat that can be enjoyed in moderation.


Ingredients
  • 30g unsalted butter
  • 30g flour
  • 450ml whole milk
  • 150g extra mature cheddar or Emmentaler, grated
  • 5 slices of processed cheese
  • 1 teaspoon habanero red savina no. 7 or jalap-lemon powder
  • ¼ teaspoon smoked paprika
  • Tortilla chips, for serving
Procedure
  1. Melt the butter in a medium saucepan over medium heat, and once melted, add the flour. Cook for 1-2 minutes, then slowly pour in the milk, stirring continuously until you get a smooth bechamel-like sauce. Let it simmer for 1-2 minutes.
  2. Remove from heat, stir in the grated cheese and cheese slices until everything is melted and the sauce is thick – return to heat for a minute or two if the cheese does not melt completely. Add the smoked paprika, then season with salt and pepper.
  3. Reheat the sauce over low heat until it's nice and hot, then pour it into a serving dish and sprinkle with the habanero or jalap-lemon powder. Dip the tortilla chips to enjoy fully.
