PUMPKIN WITH GARLIC, OIL, AND CHILI

Ingredients:
• 500 g of cleaned pumpkin
• 1 teaspoon of brown sugar
• 1 garlic clove
• Salt to taste
• Habanero Chocolate chili to taste
• A handful of fresh parsley
• Extra virgin olive oil (about 6 tablespoons)

Preparation:
To prepare a delicious dish of pumpkin with garlic, oil, and chili, start by peeling the pumpkin and cutting it into regular cubes to ensure even cooking. In a large pan, heat a generous drizzle of extra virgin olive oil with a whole garlic clove, letting it lightly brown to flavor the oil. Once the garlic turns golden, it's time to add the pumpkin cubes and a sprinkle of Habanero Chocolate chili, which will give the dish a pleasant spicy note.

Sauté everything over high heat, stirring well to give the pumpkin some color. At this point, you can add salt to taste to enhance the flavors. As the pumpkin starts to brown, lower the heat and add a teaspoon of brown sugar, a trick that will help balance the chili's heat and slightly caramelize the pumpkin.

Cover the pan with a lid and let the pumpkin stew over low heat for about ten minutes, stirring occasionally to ensure even cooking. If you notice it's sticking to the pan, feel free to add a bit of hot water to maintain the necessary moisture. The pumpkin is ready when the cooking liquid has evaporated and the cubes are tender.
