FOOD PAIRINGS

The green Jalapeño is not only appreciated for its unripen overtones, but especially for its herbaceous/green-vegetal scent deriving from a mixture of volatile flavour chemical substances (aromas), which are naturally found in this and other types of chillies. The molecule responsible for this scent is called 2-isobuthyl-3-methoxy pyrazine. This “intense green” fragrance gradually decreases when the fruit  ripens, thus why Jalapeños are harvested while still green.

Unlike capsaicin, which is found in the chilli’s placenta, the methoxy pyrazine, along with all other chemical volatiles, is found primarily in the pulp and defines the freshness of the product.

Well aware of this secret, Peperita, through a special cold working process, is able to capture and preserve the fragrance and pungency of fresh Jalapeños inside extra virgin olive oil.

Thanks to these astounding organoleptic properties, Peperita’s Jalapeño Oil can be used in all kinds of chilli-based dishes.

The first recipe that comes to mind is clearly Guacamole, where the Jalapeño combines harmonically with avocado and coriander leaves.  This chilli pepper, however, can also go well with roasted meats, pork chops, vegetables in vinaigrette, legumes salads, pasta, sauces and fruit salads.

Mayo or other tomato-based sauces realized with Peperita’s Jalapeño Oil are perfect fillings for paninis, croutons or gazpachos and pair well with fresh cheese.

 

 

DESCRIPTION

 

The Jalapeño is probably the most popular chilli pepper in the world. It Hails from South America and its name derives from Xalapa (Jalapa), the capital city of Veracruz, situated in Southern Mexico, right where the Aztecs used to live and where this chilli was originally cultivated.

The Jalapeño belongs to the Capsicum annuum species. The fruits hang down from the plant, and once fully mature they can measure from 5 to 10cm. Commonly harvested while still green, the colouration of the Jalapeño can vary from red, to orange and yellow when fully ripe. Its spiciness level can range from 5,000 to 10,000 SHU.

 

Peperita obtains this astonishing spicy condiment by pressing together the finest olives and green Jalapeños, in order to maintain the taste and scent of freshly harvested green chilli peppers over time.

Among many of the healthy micro elements of the green Jalapeño we can find: Vitamin A, which improves the condition of eyes, hair and skin; and Vitamin C, which not only stops the spread of free radicals, but is also useful and crucial in raising the barriers of our immune systems, thus lowering the risks of tumours by inhibiting the synthesis of carcinogenic substances. In addition, it’s scientifically proven that consuming chilli peppers at least 4 times a week halves the risk of cardiac arrest.
