Peperita’s Garlic Condiment is a must-have ingredient for our kitchens. This oil, created by pressing together Tuscan Olives from organic agriculture and fresh red garlic is a delicate treasure trove of aromas and savours , which is able to elevate any kind of dishes with the freshness and scent of garlic.

It’s perfect on simple bruschettas, as a topping for pasta, pizza or sauces. Surely, when mixed with Peperita’s chilli peppers it could turn into an extremely deliscious Pasta with garlic, oil and chillies!

 DESCRIPTION

Garlic (Allium Sativum L.) is a bulbous plant which belongs to the Liliaceae species. A recent classification however, allocates it among the Amaryllidaceae (sub-species Allioideae).

Peperita’s Garlic Paste has been realized with own produced organic garlic. Garlic is harvested fresh between June and July and immediately processed with an innovative technique invented by Peperita which allows the development of all the typical characteristics of freshly harvested garlic.

This “essence” is captured and enclosed in a small vase which becomes a treasure trove of precious scents for your kitchen.

Garlic is a common ingredient in  the kitchen and it was exploited even in Ancient times because of its beneficial properties, which are still appreciated by many cultures all over the world. Our ancestors used it as insect repellent, some others used it to drive away evil or witches. Medieval Europe considered garlic a panacea against the plague and the Egyptians used it during sepulchral rites.

Some beneficial properties of garlic are attributable to the presence of Alliin and its derivates such as allicin, all Sulphur compounds that can be found in fresh garlic.

Swallowing an entire clove of garlic, or using it to prepare a soup without crushing it or mincing it is not going to develop any odorous substances. The smell manifests only when the endogenous enzymes which are contained in the bulb react with oxygen, thus creating another hundred of volatile substances among which shines the allyl disulfide.

Garlic has antibacterial and antifungal properties. Some surprising studies report that it can also help prevent certain forms of cancer. 100 grams of garlic provide about 150 calories, 35g of carbohydrates and about 7g of protein. Garlic is also rich in vitamins B1, B2, B3, B6, folic acid, vitamin C, calcium, iron, magnesium, manganese, phosphorus, potassium, sodium and zinc.
